General use: Besides the well known uses on pancakes, waffles and French toast, maple syrup is wonderful on ice cream, muffins, toast, cereals, yogurt and fresh fruit, as well as in coffee and tea.
General Substitution: As maple syrup is sweeter than regular sugar, use about 25% less syrup as a substitute. When you do, use a bit less primary recipe liquids (as syrup is liquid). You can also use some maple syrup and some regular sugar as your taste dictates.

Folklore
"Frog Run": Folk wisdom has it that when the frogs begin to sing, or spring peepers can be heard at night, spring is imminent. So, many sugar makers call the last batch of sap that flows a "frog run."
Terms
- Sugarbush: A grove of sugar maple trees; also called sugar grove or sugar orchard.
- Sugar Camp: Before the advent of tubing that carried sap to a central location, maple sugaring sites were often set up in remote areas in the woods by Native Americans and early settlers.
- Sugarhouse: A simple building, usually uninsulated, that shelters the boiling setup for a sugar bush. Sugarhouses have a vent in the roof, space for an evaporator, fuel and sap storage.
- Sugar-off: The end of the season, when the sap has stopped running and the boiling is done.
- Buddy: Used to describe the unpleasant taste of sap that marks the end of the season.
Facts
- Pure maple syrup is three times as sweet as regular table sugar.
- Since maple syrup will not freeze if properly made, the freezer is a good place to store it almost indefinitely. Bring it to room temperature or warm it before serving.
- Use the microwave to warm it - heat on high for 30-60 seconds per 1/2 cup.
- For baking, substitute maple syrup for sugar.
- 3/4 cup maple syrup = 1 cup granulated sugar
- Reduce dominant liquid in the recipe by 3 tbsp. for each cup of maple syrup used.
- Maple syrup is 50 calories per tablespoon.
- Refrigerate after opening.
